It's all about control. With a regular RGB strip, all the LEDs are one big circuit — the whole strip has to be the same color at the same time. Addressable LEDs, like the Neopixels here, have a tiny microchip for every single LED. This means you can tell each one what color and brightness to be, all on a single data wire. That's how you get those flowing rainbow effects, chaser patterns, and complex animations.
They're very similar but have key differences. The WS2812B is the classic, but if one chip dies, the rest of the strip after it goes dark. The SK6812 is often a drop-in replacement, but with slightly better PWM frequency and it also comes in an RGBW variant, giving you a true white channel.
